How to Make Gravy with Muskmelon Seeds: In this summer season, watermelon and muskmelon are available in the market at very cheap prices. Consuming them gives a lot of relief to the body from heat. Watermelon seeds are meant to be thrown away, but muskmelon seeds can be used in many ways. People dry them and use them as dry fruits. These seeds are very beneficial for the body.

But, do you know that these seeds can also be used to make the gravy of any vegetable royal? Yes, it may sound strange but it is true. Here we will tell you how you can use muskmelon seeds instead of cashews to make royal vegetables.
Ingredients to make Shahi Gravy from Melon Seeds
Dried melon seeds – 2 tbsp
Onion – 1 medium (chopped)
Ginger-garlic paste – 1 tsp
Green chilli – 1
Tomato – 1 medium
Curd – 2 tbsp
Oil or ghee – 2 tbsp
Turmeric, coriander powder, garam masala, salt
Kasuri methi – 1 pinch
Method
If you use melon seeds instead of cashews in the gravy of Shahi Sabzi, then the taste of the vegetable will also be very good. No one can tell the difference. To prepare gravy from melon seeds, first of all, soak the peeled melon seeds in water for 10-15 minutes. Then put it in the smallest jar of the mixer and make a paste. Add very little water to it for grinding, otherwise the paste will become thin.
Now it is time to prepare the masala, so first of all, take some oil in a pan and heat it. When it gets hot, add onion and fry it till it turns golden. When it gets fried, add ginger-garlic paste and finely chopped green chilies to the same pan.
After frying the masala, it is time to add tomatoes and other spices. Mash everything and mix it. When oil starts releasing, add curd on a low flame and keep stirring it continuously.

Finally, add melon seeds paste to this masala. Add it and cook on low flame for 4 to 5 minutes. When it gets cooked, add kasuri methi and garam masala and let it boil a little. The gravy is ready. Paneer, mixed veg, potato, or koftas can be prepared deliciously in this gravy.
