  • 1/2 cup jowar flour
  • 1/2 cup finely chopped coriander
  • 1 cup water
  • 1 tsp Rava
  • 1 tsp rice flour
  • 1 tsp chilli powder
  • 1/4 tsp turmeric
  • 1/2 tsp salt
  • Oil
To Grind
  • 4 cloves garlic
  • 3 green chillies
  • 1/2-inch ginger
MethodStep 1: Start by preparing the ginger-garlic paste. Grind ginger, garlic and green chillies into a coarse paste and keep it aside. Step 2: In a mixing bowl, add jowar flour, chopped coriander, green chillies coarse paste, turmeric, chilli powder and salt. Step 3: For a crispy dhirde, you can also add rice flour and semolina. Mix everything well and slowly add 1 cup of water to the mixture. Form a thick batter into a flowing consistency. Step 4: Allow the batter to rest for 10 minutes and heat a flat tava on a medium flame. Drizzle a few drops of oil and pour the dosa batter in the middle of the tava and allow it to spread by itself. Step 5: Let the dhirde cook until the surface starts drying out and the edges get slightly golden. Flip the dhirde and cook for a few seconds. Serve hot with dahi and enjoy!
