Some weeks can be busier than others, leaving little time for cooking and meal prepping. That's why it's important to have quick and easy dinner recipes on hand.
When it comes to simple midweek dinners, no one does it better than Jamie Oliver, who has a "speedy" quiche traybake recipe that's ideal for the whole family.
When made according to his website's specifications, this easy and nutritious dish yields four servings.
This recipe also allows for some easy swaps, with spring onions interchangeable with finely sliced and fried regular onions.
You can also spread cream cheese over the base of the filo, then add the vegetables, sprinkle with grated Cheddar, and bake for 20 minutes.

Six medium free-range eggs
One bunch of spring onions
55 g mature Cheddar cheese
One large courgette
300 g broccoli
One x 250 g pack of ready-rolled filo pastry
Preheat the oven to 180°C/350°F/gas mark 4. Lightly grease a large 25cm by 35cm roasting tray with 1 teaspoon of olive oil. Crack the eggs into a bowl and whisk them with a fork.
Layer the filo sheets in the tray, alternating directions with each sheet, and brushing a little beaten egg between each layer. Ensure the sheets cover the base and sides of the tray to hold the filling. Brush the top layer with egg and scrunch up any excess pastry around the edges.
Finely slice the spring onions and add them to the bowl. Coarsely grate the Cheddar cheese (saving a bit for the top) and the courgette, then add them to the bowl. Break the broccoli into florets, thinly slice them, and add them to the bowl as well. Season with sea salt and black pepper, then mix thoroughly.
Carefully pour the mixture into the prepared pastry case, spreading it evenly. Sprinkle the reserved cheese on top.
Bake on the bottom rack of the oven for 35 minutes, until the pastry is golden and the filling is set.
